I’m so ready for warmer weather and am hoping that drinking a few frozen cocktails will have things feeling a bit more spring around here. Temperatures in the 40’s and rain just aren’t what I had in mind for this week. This margarita definitely cured my cold-weather blues!
I’m such a sucker for a good margarita and can’t get enough of this orange creamsicle flavor. It just reminds me of those popsicles I used to love so much as a child (and now). Those frozen delights inspired this cocktail and my favorite, Pineapple Orange Creamsicle Mimosas. You could do either one of these citrus dreams for brunch as far as I’m concerned.
Is anyone else wondering how the heck Easter is next weekend? I’ve been slacking off big time on all my grandiose recipe plans for this blog. I was going to have chocolate eggs, a new french toast casserole, mimosa bar and brunch bread. Well, all I seem to have is this cocktail right now. Tomorrow will have to be the beginning and end of operation Easter recipes. I’ll be lucky to get one thing posted before the whole thing is straight up over and out. It is such a circus around here sometimes and I literally, will be at the circus with my kids tomorrow. Let’s see if I can motivate myself to wake up early and get things pumping before creepy clowns ensue.

A frozen, Orange Creamsicle Margarita with ice cream and fresh fruit juices is a refreshing take on the classic cocktail.
- 4.5 oz. gold tequila 3 shots
- 1 c. Vanilla Ice Cream
- 1.5 oz. Triple Sec 1 shot
- 1 c. orange juice
- 1/4 c. fresh lime juice around 2 limes
- 2 tbsp. agave nectar or sugar
- 1 c. ice
- 4 slices fresh orange
- 4 slices fresh lime
For a sugared rim, rub the rim of each glass with a fresh lime until coated and lightly dip onto a plate of sugar.
Combine all ingredients into a blender bowl and blend until smooth.
Garnish with fresh orange and lime slices.
