I am in love with these raspberry and orange cheesecake parfaits! They have the desired rich and creamy texture of cheesecake without nearly as much fat due to the addition of yogurt. I enjoy experimenting with different flavors and really like how the orange flavor blends with the raspberries. I was thinking about whether this could be a breakfast item and have concluded…it sure can! Fruit+Yogurt=Partially Healthy breakfast combination (nevermind the matter of delicious cream cheese). …
Whole Wheat Bananas Foster Pancakes
These Whole Wheat Bananas Foster Pancakes have homemade caramel sauce, bananas and walnuts on top of a bed of whole wheat pancakes. These are so much better than the box mix
and worth the extra effort! I try and substitute healthier ingredients whenever possible, so I opted to make these pancakes with whole wheat flour.

Best Spinach and Mushroom Quiche
This Best Spinach and Mushroom Quiche is my absolute favorite combination of eggy-goodness with spinach, mushrooms, feta and cheddar cheese. Who doesn’t like a crispy pie crust as the base of their main entrée? Meat eaters can also opt to add a little sausage for a heartier option. The beauty of this dish is that you can eat it for any meal. It makes a great dinner with a nice side salad or a great breakfast with a side of fruit. I make this every year for Easter brunch (along with my delicious peach french toast). …
Key Lime Pie Martini
This Key Lime Pie Martini is sinfully delightful! If you enjoy the pie as much as I do, then you MUST try this today in honor of Saturated Saturday! Imagine the smooth creaminess and tangy flavor of a pie packed into a perfect, delectable drink (without all the fat).
I am out of control with this one! I had my in-laws over yesterday and began chatting about how excited I was about my next drink recipe. Of course, my mother-in-law was anxious to “sample” this new delight immediately (I guess it was late enough somewhere). I think she really enjoyed being the guinea pig with this one.
I had to try a few different variations of this recipe to get it just right and I absolutely refused to waste alcohol. That is probably why I was so blissfully happy last night. Let me just say, that dealing with a teething one-year-old has never seemed more manageable.
Utilize all of that wonderful sweetened condensed milk by making a pitcher of these when you have company over. It is such a great way to drink your dessert.
I am totally fine with not taking a vacation this summer…I just need my Key Lime Pie Martini, a little reggae music playing and I am instantly transformed to a Caribbean cruise (and who wants to worry about becoming shipwrecked and getting some nasty stomach virus anyway). Okay, I am totally convincing myself now. What a money saver!!! Hope you all enjoy and CHEERS to anyone else trapped in the humid Midwest for the summer.
If you like this Key Lime Pie Martini, be sure to check out my Cocktail Page for more boozy inspiration. A Georgia Peach Martini or Moscato Dole Whip are a couple of my favorites. I am off to the kitchen to prepare my next creation, Spinach and Mushroom Quiche. Please stay asleep just a little bit longer baby girl!

Tropical Chicken Salad Sandwich
A tropical twist on a classic delight makes this chicken salad absolutely delectable. It is loaded with grapes, strawberries, apples, pineapples, celery and pecan pieces and greek yogurt is substituted for a healthier option. I definitely had a case of the Mondays today. I didn’t want to leave my two little girls behind to go to work. However, two near-miracles happened today that really turned things around for me. …
Strawberry Watermelon Mojito
This Strawberry Watermelon Mojito is a refreshing combination of mint, strawberry and watermelon. It is a sure way to quench your thirst and fulfill your need for a bit of alcohol! I have deemed it necessary to institute a new weekly excuse to drink and have come up with “Saturated Saturdays”. I admittedly was a day late this week, but nonetheless this drink was divine. …
