These Pineapple Orange Creamsicle Mimosas are an ethereal blend of pineapple juice, orange sherbet and sparkling Moscato. Only 3 ingredients transforms the basic mimosas into a creamy, dreamy combination that will wow your guests at your next brunch. 
Blending the ingredients together ensures the perfect flavor combination in each sip and tastes just like a classic, dreamy creamsicle. A bit of Moscato in a cocktail is just always a good idea.
I just love that mimosas are a dedicated brunch cocktail. That gives us the perfect excuse for a drink before noon (without judgment). You may have noticed that I have a minor obsession with all things brunch and cocktail, so this makes me very happy.

There is no need to limit yourself with the boring orange juice and champagne combination when there are so many possible combinations. You can try different variations of juices and fresh fruit purees and even make a beautiful mimosa bar for special occasions.
Now, that is one brunch that I want to be invited to (or any for that matter)! Just be sure to include a fruity combination of carbs and I am game.

These mimosas are just begging for you to make fruity pancakes or French Toast to go with them (the ultimate brunchie-lover spread). I recommend my Overnight Blueberry Cream Cheese French Toast or Lemon Poppy Seed Pancakes.
I guess we can throw in some veggies and a bit of protein with some Vegetable Quiche Cups with Goat Cheese while we’re at it. Okay, my brunch planning work is done for today.

Now, we just need to come up with an excuse to host a brunch ASAP! Father’s Day seems reasonable to me…double header brunch and BBQ situation here we come.

- 3 C. 24 oz. Sparkling Moscato
- 2 C. 16 oz. Pineapple Juice
- 1 1/2 C. Orange Creamsicle Ice Cream OR
- 1 1/2 C. Orange Sherbet and 1/2 C. Milk

Add ice cream, pineapple juice, and wine to blender.

I only had a slight mishap with the development of this recipe. I put the coconut on a baking sheet to toast in the oven, put it on broil, and got slightly distracted with the kids. Oh if I could count the times I have burnt or ruined something due to total mayhem in the kitchen. Anyhow, the coconut literally caught on fire and left the house in a horrible smokey state. Ha…nothing like having to open the windows when it is 20 degrees outside. I have learned my lesson…coconut is extremely flammable and only needs to be toasted for a hot minute!
