This Overnight Apple French Toast Casserole has a warm, brown sugar, butter and cinnamon sauce. It is my family’s favorite breakfast recipe of all time. A generous heaping of Granny Smith apples gets coated with a light dusting of cinnamon and sugar before baking it in the oven. The perfectly, moist and sweet french bread absorbs all the eggy goodness overnight. Ohhh that sauce, that sauce, that sauce! It just makes my mouth water thinking about it.
Um, did I mention that sauce yet? Look how it just gets poured over those beautifully baked apples. The aromas from this dish are just pure punishment when you have to wait for your company to arrive. Maybe just a little nibble won’t be noticed. 🙂 Have you ever just said heck with it and ate a bite or 2? I plead the 5th on this one.
An overnight brunch recipe makes life soooo much easier in the morning when you are expecting guests and have other stuff to cook (and a few more piles of toys to hide from company still). I am still working on engineering a toy trap door that is able to suction all toys into a secret compartment not to be found by anyone. Oh well, we do what we can…clean house (uncheck), happy kiddos (check), happy tummies from french toast (check, check).
I think it is becoming alarmingly apparent that I have an unhealthy obsession with all things cakey and sweet. This is an unfortunate genetic defect that has affected my ability to eat other foods since childhood. I am happy to announce that I have successfully transitioned to a balanced diet after years of eating french toast for dinner as a child. Yes, I was a bit picky and spoiled…my mini me is following in my footsteps (headache approaching).

I would much rather have a festive green drink for St. Patrick’s day than the traditional corned beef meal. The only time I really make Shepherd’s Pie is when I have leftover turkey and mashed potatoes. This year, St. Patrick’s Day was enjoyed throughout the week in quarantine with 1 (or 2) of these and my favorite green boozy delights.
Boozy cereal shakes are one of my newfound enjoyments. I recommend trying this recipe with any of your other favorite childhood cereals. You really can’t go wrong with this sweet, creamy flavor combination. I experimented with this recipe last year and tried making it with ice cream and it was incredibly too sweet. Even for someone with a major sweet tooth like myself. A bit of vanilla Greek yogurt is healthier and gives it the perfect texture.
Trying to home school my 2 little ones while blogging and working a job in social services has proven to be a bit of a challenge. That is why I’m just now getting my St. Patty’s Day post up. Multi-tasking has taken on a whole new meaning that has me wanting to indulge in all my favorite cocktails. I may be short on toilet paper, but my liquor cabinet is fully stocked. We may not be able to leave the house, so let’s enjoy a Painkiller Cocktail or some Jamaican Rum punch.

I am so behind in my posting due to my family being hit hard with the flu this season. This is the first weekend in over a month that one of us isn’t sick. My husband and I are finally having our Valentine’s dinner out tonight. I’m definitely looking forward to some adult time and great food. A nice pitcher of this wouldn’t hurt either!
It is no secret that I have a thing for sangria’s and dessert martinis. A Chocolate Covered Strawberry Martini, Salted Caramel Chocolate Martini or a pitcher of this Strawberry Rose Sangria are perfect for a stay-in Valentine’s Day dinner or an after dinner cocktail. As a bonus, having most of your cocktails at home is a great way to save a few dollars as well. I usually enjoy my own recipes a lot more than the ones I order at most restaurants anyway.
Strawberries are one of my favorite fruits to use in a sangria and are a great stand alone fruit with Rose. The Strawberry Schnapps adds the perfect, festive red tone to this beautiful cocktail. I like to use vanilla vodka, but regular vodka would do just fine as well. A splash of Sprite adds the perfect bit of fizz for a bit of fancy romance and added sweetness. Fresh strawberries are easily cut into heart shapes with a paring knife for a cute garnishment.

This Candy Cane Martini is perfect for the holidays with Godiva White Chocolate Liqueur, vanilla vodka and peppermint schnapps. A floating of whipped cream with a candy cane rim and garnishment make this dessert martini a festive treat.
It isn’t the holiday season without me adding a new martini to the cocktail page. This one is a new favorite for sure. I love the subtle hints of peppermint mixed with the heavenly taste of Godiva White Chocolate.
It doesn’t have that overpowering sweetness like a candy cane, so it is just pure bliss in a glass. I like to add whipped cream to just about anything, but the recipe is definitely good enough as a stand alone cocktail without it. All you really need is a small candy cane hanging from the rim to complete this festive look.
I’ve been sitting on this recipe for a couple of weeks and am finally making it happen two days before Christmas. How the heck did that happen anyway? I kept telling myself that there is plenty of time and here I am doing a Christmas post and still planning a couple of great new appetizers for New Year’s.

This Candy Cane Martini is perfect for the holidays with Godiva White Chocolate Liqueur, vanilla vodka and peppermint schnapps. A floating of whipped cream with a candy cane rim and garnishment make this dessert martini a festive treat.
Prepare the martini glasses ahead of time. Rotate the rim of the glass on a plate of maple syrup until coated.
Dip the rim on a plate of crushed candy canes until coated.
Add all cocktail ingredients to a shaker. Shake vigorously until cold and strain into a prepared martini glass.
Finish the cocktail with a floating of whipped cream and a sprinkle of crushed candy canes. Hang a whole candy cane on the side of the glass.

Deciding what to have for dinner or what dish to bring to a holiday dinner can be a huge headache. Especially, when my Dad graciously informed me that Green Bean Casserole was voted one of the worst Thanksgiving dishes of all time. I assured him that my version would not be lacking in flavor with plenty of cheese and bacon goodness. Thankfully, the dish was a huge hit. There were no issues with bland flavors concocted from mounds of cream of mushroom soup, canned green beans and dried out french onions.
I usually don’t make a habit of experimenting with new recipes for guests before testing them out for myself, but time is not always our friend. Defrosted several bags of frozen green beans the day before and it was definitely worth it. The soggy canned green beans have no business in any casserole as far as I’m concerned. I literally, used to gag on them as a kid and hide them in my napkin. Boy did things get easier after we finally got a dog.
I sauteed plenty of onion with garlic before adding them to a nice thick cheese sauce with a bit of Worcestershire sauce and paprika for extra flavor. The extra flavor really adds to the dishes’ beautiful, cheesy goodness. I do the same thing to my Fancy Mac and Cheese recipe…SO good! I ended up adding an entire pack of turkey bacon (totally necessary). A crispy, Ritz cracker topping gives this Cheesy Bacon Green Bean Casserole recipe a nice extra bit of texture for the win.
Don’t forget to enhance your holiday entertaining with a nice adult cocktail. A Caramel Apple or Christmas Sangria are two of my favorites that have become holiday staples. A festive Cranberry Orange punch is perfect for guests on Christmas or New Year’s.

This Cheesy Bacon Green Bean Casserole has so much more flavor than the traditional cream of mushroom soup version. I added plenty of Velveeta and Colby Jack cheese to this cheesy sauce with a pack of bacon and crispy, cracker topping.
Prepare bacon per package instructions; cut into pieces around 1 inch wide. In a medium saucepan, add 1 stick of butter and melt on medium heat.
Add the onion and garlic and saute until onion becomes translucent. Lightly salt and pepper.
In a small bowl, whisk together milk with flour. Add to the onion mixture.
Stir continuously until mixture begins to thicken. Stir in the cream of mushroom soup, Worcestershire and paprika. Add Velveeta and Colby Jack cheese.
Stir until cheese is melted. Salt and pepper to taste.
Add cheese mixture and cooked bacon to the green beans; stir until combined. Add green bean mixture to a 9x13 inch baking pan.
Add 1/4 c. of butter to a small skillet on medium heat. Once melted add crackers, parsley and lightly pepper. Lightly stir for a few minutes until crackers begin to lightly brown.
Add cracker mixture to the top of the green beans. Bake at 350 degrees for 30 minutes covered. Remove cover and bake an additional 30 minutes.
This No Bake Pumpkin Cheesecake Lasagna makes a quick and easy holiday dessert. It has layers of cinnamon graham crackers, caramel sauce, pumpkin cheesecake, pudding and toffee bits for plenty of flavor. Freeze it the night before for a no-fuss holiday dessert.
I’m not a huge fan of the traditional Thanksgiving desserts, so you will find me feasting on some of this Cheesecake Lasagna, Pumpkin Pecan Cheesecake, or Pumpkin Pie Martini come Thanksgiving. A dessert martini is a good way to get things started before ending on a high note with some of this beautiful cake. Just remember that elastic is our friend for the holidays.
I’ve learned a very valuable lesson today. Besides, always having snacks and refreshments on hand at all times. Never leave the window for a future blog post open on my computer! Imagine my surprise when I happened to check my website and saw that I had a new post not of my own doing. My kindergartner’s computer class really seems to be paying off! Apparently, that blue “Publish” button makes fun things happen. She told me she wanted a camera for Christmas, so I guess we are on our way to a future food blogger. We already have the first published post out of the way. Anyway, she has forced my hand in actually getting this dessert posted before the holiday as planned.
This dessert is super simple to make without needing to take up space in the oven. Just piece it together and let it sit in the freezer to thicken for at least 4 hour for maximum enjoyment. I actually left most of it in my freezer for a couple of weeks and it still tasted amazing after letting it thaw for a bit. Don’t forget to leave a plentiful dollop of whipped cream on top with more toffee bits for a completely satisfying dessert experience.
This No Bake Pumpkin Cheesecake Lasagna makes a quick and easy holiday dessert. It has layers of cinnamon graham crackers, caramel sauce, pumpkin cheesecake, pudding and toffee bits for plenty of flavor. Freeze it the night before for a no-fuss holiday dessert.
In a large mixing bowl, beat together cream cheese, pumpkin, sweetened condensed milk, vanilla and 1 tsp. of cinnamon.
In a separate mixing bowl, stir together the pudding mix, maple syrup, cool whip and 1/2 tsp. of cinnamon.
Place a layer of 6 graham crackers onto bottom of an 11x7 baking pan.
Spread half of the cheesecake mixture over the top of the graham crackers.
Top the cheesecake mixture with another layer of graham crackers.
Drizzle 1/3 c. of caramel sundae sauce over the top of the graham cracker layer.
Spread the remaining cheesecake mixture over the graham crackers.
Spread the cool whip mixture over the cheesecake layer.
Drizzle with 1/3 c. of caramel sauce and top with toffee bits.
Freeze for at least 4 hours before serving. Allow to thaw before cutting if frozen.
Top with a dollop of whipped cream and more toffee bits before serving.

This Fireball Apple Cider Sangria is the perfect fall party cocktail. Fresh apples and cinnamon sticks add to this flavorful cocktail with apple cider, Pinot Grigio, Fireball Cinnamon Whiskey and a splash of ginger ale.
A good sangria is always in order when I host for Halloween or Thanksgiving. It is more festive than a plain bottle of wine and packed with all the fall flavors. I love that it can be prepared ahead of time to avoid the extra mess. That leaves room for all the fun holiday martini mixers such as a, Melted Witch or Candy Corn Martini. Seriously, the only time candy corn enters my mouth is if it is infused with vodka in martini form (so good).
Sangria can be a sneaky beast! Especially, when you add an extra bit of alcohol such as Fireball. The sweetness from the apple cider mixed with the perfectly paired cinnamon whisky does an excellent job of masking any taste of alcohol. It makes for an extra fun night of trick-or-treating and helps keep you warm. The inevitable cold snap and rain always just seems to show it’s ugly face. A fire-pit in the driveway to hand out candy is always a good idea. We got a reasonable one last year the day before Halloween and it is definitely going to be a new tradition. The combination of s’mores and sangria is my version of an adult treat.

These Chocolate Spider Whoopie Pies are so fun to make with the kids for Halloween! The cookies are easily made with a chocolate fudge cake mix and a dreamy, chocolate marshmallow creme filling.
My daughter loves to help me in the kitchen and I promised her we would make a fun treat for Halloween. I’ve been wanting to make a fall themed whoopie pie for awhile, so these spider cookies were perfect. Cake mix cookies such as my Pumpkin Gooey Butter, are a great way to add plenty of flavor without all of the extra ingredients and measuring. Chocolate Fudge cake mix makes the perfect, soft cookie with the addition of a bit of cream cheese and butter.
You could make this recipe even easier by using ready-made icing, but I think the best part of any whoopie pie is that rich, creamy filling. Let me tell you, this filling is do delectable with the addition of melted chocolate chips and a bit of marshmallow fluff.  It is really hard not to eat it by the spoonful while piecing these cuties together.
Using a cookie scoop for measuring and lightly pressing each dough ball with the back of a glass helps to ensure symmetry. These cute little eye candies were at my local grocery store, but you can also order from a large variety of them on Amazon. Kitchen scissors can be used to cut the Chocolate Twizzlers in half lengthwise for these perfect little spider legs. I bent each Twizzler a bit in the middle to have them face up at the top and down towards the bottom. An extra dollop of filling on top of the Twizzlers helps to keep the top of the cookie in place. A little bit of the chocolate filling works great to secure the eyes. I trimmed a bit off of the ends of each leg to avoid legs for days (which isn’t always a bad thing).
When making these Chocolate Spider Whoopie Pies, be sure to treat yourself with a fall cocktail. It helps to alleviate the stress of your kids trying to eat all the Twizzlers and leaving cookie debris all over the kitchen. A pitcher of Caramel Apple Sangria or Pumpkin Spice White Russian always hits the spot.

These Chocolate Spider Whoopie Pies are so fun to make with the kids for Halloween! The cookies are easily made with a chocolate fudge cake mix and a dreamy, chocolate marshmallow creme filling.
Preheat oven to 350 degrees.
Cut Chocolate Twizzlers in half lengthwise using kitchen scissors.
Prepare the cookies: In a mixing bowl; cream together the butter, cream cheese, egg and vanilla.
Beat in the cake mix until smooth.
Using a cookie scoop; make level size dough balls. Place on a nonstick cookie sheet or parchment paper at least 1 1/2 inches apart.
Lightly press dough balls with the base of a cup to flatten slightly.
Bake for around 11-12 minutes.
Allow cookies to cool for a few minutes before removing from the cookie sheet.
Prepare the filling.
Microwave on 50%; stirring every 30 seconds until melted.
In a mixing bowl; beat together the butter, powdered sugar and vanilla. Add melted chocolate chips and beat lightly until smooth.
Spread the chocolate filling on half the cookies.
Bend the Twizzlers slightly in the center. Place 4 of the halved Twizzlers on top of the chocolate filling.
Add a dollop of filling on top of the Twizzlers and top with another chocolate cookie.
Add 2 small dollops of the chocolate filling for the eyes and place candy eyes on top.
Store in a sealed container.
